Japanese tuna burger

A pretty funky and exotic one with shiitake and Japanese seaweed. And believe me, it tastes damn good!

Ingredients

  • 200-300 gr Albacore tuna fillets, cut in small pieces
  • 2 burger buns
  • 1 egg
  • 3 tbsp bread crumbs
  • 1 spring onion, finely chopped
  • 1 shallot, finely chopped,
  • ½ tsp togarashi (or black pepper)
  • salt
  • 2 tbsp teriyaki
  • 4 shiitake mushrooms, cut into slices
  • 2 tbsp mayonnaise
  • 1 lime
  • 4 lettuce leaves
  • 2 tsp chuka wakame salad (Japanese seaweed)
  • ½ avocado, thinly sliced
  • 2 radishes, cut into thin slices
  • 2 tsp sesame seeds

How to prepare

You can use almost any fish you like. Just experiment with different seafood like salmon, cod, haddock, scallops or, yes, even oysters!
Now, today, let’s start making this amazing Japanese tuna burger! A pretty funky and exotic one with shiitake and Japanese seaweed. And believe me, it tastes damn good!
I use Albacore tuna, often called white tuna. If you choose a MSC certified tuna steak, you can be assured of working with a certified sustainable piece of fish.

Preparation

  • 1 Add the tuna in a bowl together with the egg, breadcrumb, spring onion and shallot. Season with togarashi and salt.

    Mix this well together and make two burgers out of it, by hand.
  • 2 Mix the mayonnaise with lime zeste (take the full lime) and 1 teaspoon of lime juice. Put aside.

    Cut the buns into half and grill each side shortly until light brown and crispy.
  • 3 Grill the burgers on each side like 3-5 minutes (start on high heat, lower temperature after 1 minute). Add 1 tablespoon of teriyaki after 50% of the time on each side. When finished put aside.
  • 4 Pan-fry the shiitake in some vegetable oil. Add 1 tablespoon of teriyaki after 2 minutes and pan fry for another 2 minutes until they have become brown. Take off the heat.

    Roast the sesame seeds in a dry frying pan without any oil or butter. Put aside.
  • 5 Build your burger: Start with the downside of the bun. Spread some lime mayonnaise. Add the lettuce. Add the chukka wakame. Add the burger. Add the shiitake. Add the avocado. Add the radish. Add the sesame seeds. Cover the top side of the bun with mayonnaise and cover your burger!
