Greek salad with sardines

Ingredients

  • 1 cucumber
  • 6 tomatoes
  • 1 green pepper
  • 1 red onion
  • 2 or 3 tbsp black olives
  • juice of ½ lemon
  • 1 tbsp red wine vinegar
  • 5 or 6 tbsp olive oil
  • 1 or 2 tbsp dried oregano
  • salt and pepper
  • 100 g feta cheese
  • 1 can of sardines in olive oil (à 120 g)
  • ¼ bunch of mint, only the leaves

How to prepare

A twist on the classic Greek salad. These oily sardines enrich the intense flavour of this refreshing dish. Don’t forget to use MSC-certified sardines. Enjoy!

Preparation

  • 1 Scrape out the seeds of the cucumber. Cut the cucumber in cubes. Slice the tomatoes and the green pepper. Roughly chop the red onion. Add the ingredients to a bowl.
  • 2 Add the olives, lemon juice, red wine vinegar, olive oil, dried oregano, pepper and salt and mix with the vegetables.
  • 3 Cut the feta cheese in cubes.
  • 4 Open the canned sardines and add a few drops of the oil into the salad. Gently take the sardines from the can. Cut into rough chunks and add to the bowl. Finally, slice the mint and add to the salad.
  • 5 Gently mix all the ingredients. You don't want to crush the sardines. Garnish with a hint of dried oregano.
