Cod & slow cooked tomatoes

Ingredients

  • 300 – 250 gram of cod fillet skin off
  • 10-14 cherry tomatoes
  • 3 garlic cloves
  • handful of thyme
  • 3 tbsp olive oil
  • 1 tbsp vegetable oil
  • salt and pepper

How to prepare

A cod recipe from Iceland!Thanks to Icelandair we are back in Iceland again! What an amazing country. At the coast near spectacular Reykjanestá (please tell me when you did succeed to pronounce this properly.) I made this easy but delicious cod recipe. When pan-frying cod make sure you use a spatula, as the fish will become flaky quickly. I cut the tomatoes in halves but you can also keep them as a whole. The juice from the tomatoes goes extremely well together with the olive oil.

Preparation

  • 1 Slice the tomatoes in half.
    Peal and slice the garlic in rough pieces.
  • 2 Add the tomatoes into a pan with the olive oil. Add the garlic and thyme and season with pepper and salt.
    Simmer for 10-15 minutes. Take of the heat and keep warm in the oven or covered with a lid.
  • 3 Take a non sticky frying pan and add some vegetable oil on medium-high heat.
    Add the cod and pan fry for 3-4 minutes until it starts it get just a bit flaky.
    Turn carefully around with a spatula and cook for another few minutes.
  • 4 Serve the cod on a plate and dress the tomatoes with a bit of juice around.
